
I’ve been on a banana kick lately. For instance, I’ve made Banana bread, sugar-free banana muffins, and now these delicious vegan banana pancakes all this month!
These are so quick to make and come together really easily!

Therefore, Vegan Banana pancakes will quickly becomes one of your favorite brunch treats to make! Plus, using up all those bananas before they get brown always feels good. Although, the more ripe the banana, the sweeter this recipe will be!

Using coconut cream & coconut oil add a subtle sweetness and tropical flavor as well. Both coconut cream & coconut oil also add the perfect texture to these vegan banana pancakes. In fact, they are moist, decadent, and almost dessert like.
Gather your Ingredients
Vegan Banana Pancakes
- 1 Ripe Banana (1/2 C mashed banana)
- 1 Tbsp. Coconut Oil
- 3/4 C Coconut Cream Or Coconut Milk (or other vegan milk)
- 1 tsp. Vanilla Extract
- 1 1/4 C Flour
- 2 Tbsp. Coconut Sugar
- 1 Tbsp. Baking Powder
- 1/4 tsp. Sea Salt
- 1 tsp. Ground Cinnamon
For Serving
- Maple Syrup
- Blueberries
- Purely Elizabeth Granola
VEGAN BANANA PANCAKE INSTRUCTIONS
Mash Bananas
- Mash the bananas with the coconut oil. After that, add the coconut cream (or milk) & vanilla, and mix well.
Mix Dry Ingredients
- After that, in a large bowl, whisk together the flour, cinnamon, coconut sugar, baking powder, and sea salt.
Combine
- Then, to the large bowl, add the mashed banana mixture and mix very well to create the vegan banana pancake batter.
Cook Pancakes
- Finally, to a large skillet, add 1 tsp. vegan butter or coconut oil, and heat on medium/low until warm. 1/4 Cup at a time, add the vegan banana pancake batter. The batter will be thick, so if need be, spread the batter into about 1/4″ thick pancake shape. Cook about 3 minutes on each side, or until golden brown.
Serving Suggestion

Finally, serve warm with vegan butter. Additionally, top with fresh banana slices, blueberries, (or any fresh fruit slices), and maple syrup.
In addition, add some granola for extra texture. Of course, my favorite granola is Purely Elizabeth Original Granola. Specifically, it has the perfect flavor, texture, and is fully vegan.
